Delicious Vegan Spekulatius – Baking without egg, milk and sugar

Vegan baking for Christmas? With children? Is that possible?

Yes! Absolutely! Even or just because it's Christmas vegan baking is easy and possible without much effort. Vegan cookies or vegan cake recipes can often be easily implemented by simply replacing milk and eggs.

This year, I finally wanted to bake vegan Spekulatius myself. It had to be suitable for children, vegan and kind of “healthy”.

I looked for a few original Spekulatius recipes and compared them with vegan recipes. From this I have derived my very own vegan cookie recipe.

The “veganification” of cookie recipes is, as I said, often quite simple. You mostly just have to be brave and try it out! I have been baking Christmas cookies for years and have often simply omitted the egg without replacement.

In Christmas recipes, milk can usually be replaced easily by a vegetable variety. Depending on their function, eggs can often be replaced without hesitation by liquids, apple paste, bananas or an egg substitute made from linseed and water.

We also do without refined sugar as much as possible, so I use a mixture of coconut blossom sugar and birch sugar in the recipe. It would be interesting to try the whole thing out with dates…

Keep in mind that our ancestors didn't always have all the ingredients at hand and were inventive in times of need. Now we can fall back on this knowledge again.

Since I wanted to give something to my son this week for a big breakfast party in the daycare, this was the ideal time to try out the recipe right away. And so that you also have something of it, I love to share the recipe with you!

Vegan Spekulatius

Preparation time

10 minutes preparation, 30 resting time for the dough

Baking time

8-10 minutes

Total: 40 minutes + time for cutting out

Ingredients for 3-4 baking trays

  • 500g flour (wheat or spelt)
  • 100g ground almonds (optional)
  • 200g vegetable margarine (e.g. Alsan organic)
  • 200g sugar alternative (e.g. 100g coconut blossom sugar + 100g birch sugar/xylite)
  • A good pinch of vanilla
  • A big pinch of salt
  • 1 packet or 5 tbsp Spekulatius spice
  • 5 tablespoons vegetable milk (e.g. almond milk)
  • 2 tablespoons unsweetened apple puree

Preparation

  1. Mix all dry ingredients in a mixing bowl.
  2. Add the vegetable milk, apple puree and margarine and mix well with a food processor (flat mixer), a hand mixer (dough hook) or with your hands. I have had good experiences with the hands.
  3. Preheat the oven to 175° C top and bottom heat.
  4. Let the Spekulatius dough rest in the refrigerator for at least 30 minutes.
  5. Then knead the dough again. If necessary, let it warm up a little before.
  6. Sprinkle a little flour on your worktop, roll out the dough evenly and cut it out with the biscuit or cookie cutter of your choice.
  7. For example, if you have biscuit stamps, you can decorate them as you wish.
  8. Bake in the oven for about 8-10 minutes and allow to cool.

The dough is a bit more sticky at the beginning, which has the advantage that the dough doesn't get too dry when I roll it out again and again and dust it with flour, but rather better with time. You can also add a little more flour from the beginning, depending on your own preference.

I hope you like the spekulatius! My family, the children and the teachers in our daycare were very satisfied and left nothing behind.
